Cheesy potato casserole is an age-old favorite, but when I found this recipe for a cheesy potato recipe with chicken and bacon I was so excited. Why had I not thought of that combination before, as many times as I have made au gratin potatoes? This video by the charming Youtuber Greg’s Kitchen is packed full of great ideas, Greg makes this recipe look absolutely effortless. The only preparation work is to slice your chicken, slice your potatoes, cook the bacon, and make the (butter, egg, and milk) sauce. After you have done those simple tasks, you just layer your ingredients, drizzling heavy cream in between, and cook the lovely casserole in a 350-degree oven for one hour.
Ingredients:
- 2 chicken breasts (cut up in small bite-sized strips)
- 4 strips of bacon (cut up in cubes)
- 5 medium potatoes (sliced into rounds with skin on)
- 1 Onion (sliced into rings)
- Heavy cream (for drizzling over the layers of potatoes)
- Freshly cracked black pepper
- Cheese (cheddar, gruyere, swiss, or whatever you have will work)
Directions:
First, you will make the butter mixture by melting it in the microwave and then adding milk, eggs, and freshly cracked black pepper. This mixture will be the glue that holds your casserole together.
Then you will layer the potatoes, chicken, bacon, cheese and heavy cream then bake in a 350-degree oven for 1 hour.
This recipe is absolutely fabulous and I can’t wait to make it.
